SERVES:

4 (makes 12 biscuits)

for the biscuits:

INGREDIENTS:

4 cups all-purpose flour
2 Tbs baking powder
2 Tbs sugar
1 tsp salt
6 Tbs unsalted butter, cubed
1 1/2 cups buttermilk (or regular milk)

PROCEDURE:

Preheat the oven to 400 degrees and use a large mixing bowl to combine 4 cups of all-purpose flour with 2 Tbs of baking powder, 2 Tbs sugar, 1 tsp salt and mix those together.

Next, add 6 Tbs of cubed butter and use a pastry cutter to incorporate that.

Add 1 1/2 cups buttermilk and very gently mix everything together until it just forms a ball.

Then roll the dough out on a floured work surface into a 1 1/2 inches thick rectangle.

Use a knife to cut the dough into 12 squares and place those on a heavy bottomed baking tray and place that onto the center rack of the preheated oven. (see hints below)

They'll take just about 20 minutes to bake.

For the eggs:

INGREDIENTS:

3-4 ounces diced smoked deli ham
1 Tbs vegetable oil for sauteing ham (plus 1 Tbs for scrambling eggs)

8 large eggs....beaten with 1/4 cup milk

3/4 - 1 cup grated cheddar cheese
1/4 cup chopped green onion

PROCEDURE:

Add a splash of vegetable oil to a large heavy bottomed pan on medium to medium high heat and saute the diced smoked deli ham to crisp up a bit.

Add a little more oil, turn the heat way down and add 8 large eggs beaten with 1/4 cup milk and cook those along and stir them occasionally as they're cooking.

Once they're almost done, add the grated cheddar cheese and 1/4 cup chopped green onion and continue to cook until the cheese has melted in and the eggs are cooked through.

HINTS:

Brush the tops of the biscuits with buttermilk before placing into oven.

Slice baked biscuits and serve with butter along side scrambled eggs.
